Ingredients
For the Cupcakes (Makes 12–14)
5 large Egg Whites, room temperature, whipped into soft clouds
10 tablespoons Unsalted Butter, softened
1¼ cups Granulated Sugar, bright and fine
2 cups All-Purpose Flour, sifted
2 teaspoons Baking Powder
½ teaspoon Fine Sea Salt
¾ cup Prosecco or Champagne, lightly sparkling
¾ cup Fresh Peaches, finely diced (peeled if desired)
1 teaspoon Vanilla Extract

For the Sparkling Pastry Cream Filling
¾ cup Whole Milk
¼ cup Heavy Cream
3 tablespoons Granulated Sugar
1 tablespoon Cornstarch
1 Whole Egg
1 Egg Yolk
¼ cup Prosecco or Champagne
1 tablespoon Unsalted Butter
½ teaspoon Vanilla Extract

For the Peach Bellini Buttercream
1 cup Unsalted Butter, room temperature
4–5 cups Powdered Sugar, sifted
2–3 tablespoons Peach Puree or Peach Nectar
1 tablespoon Prosecco (optional, for subtle sparkle)
½ teaspoon Peach Extract (optional, for enhanced flavor)
Pinch of Salt
Soft Peach & Blush Gel Food Coloring (optional)
Fresh Peach Slices or Mint Leaves for garnish (optional)
