Step 1: Prepare the Oven
Preheat oven to 350°F (175°C).
Line cupcake pans with paper liners and set aside.
Cupcake Creation
In a clean bowl, whip the egg whites until stiff peaks form. Set aside.
In a separate large bowl, cream the butter and sugar together for 3–4 minutes until pale and fluffy.
Whisk together flour, baking powder, and salt.
Alternate adding the dry ingredients and prosecco into the butter mixture, beginning and ending with the dry ingredients. Stir in vanilla extract.
Gently fold in the whipped egg whites, preserving their airy structure. Fold in the diced peaches last, distributing evenly without overmixing.
Divide batter evenly among liners, filling each about ⅔ full.
Bake for 18–22 minutes, until the tops spring back lightly and a toothpick inserted comes out clean.
Cool completely before filling.
Sparkling Pastry Cream
In a saucepan, heat milk and heavy cream until just steaming.
In a bowl, whisk sugar, cornstarch, egg, and egg yolk until smooth. Slowly pour the warm milk mixture into the eggs while whisking.
Return everything to the saucepan and cook over medium heat, stirring constantly, until thickened.
Remove from heat and stir in prosecco, butter, and vanilla.
Transfer to a bowl, cover with plastic wrap touching the surface, and chill until fully cooled.
Peach Bellini Buttercream
Beat butter until creamy and pale.
Gradually add powdered sugar, one cup at a time, mixing on low speed.
Add peach puree, prosecco (if using), salt, and peach extract. Beat on medium-high for 2–3 minutes until fluffy.
Adjust consistency with additional sugar or a teaspoon of prosecco if needed. Tint with soft peach and blush tones for a sunset-inspired swirl.
Assembly of Celebration
Using a small knife or cupcake corer, remove a small center from each cooled cupcake.
Fill each cavity with a spoonful of chilled pastry cream. Replace the cake top gently.
Pipe generous swirls of peach buttercream over each cupcake.
Garnish with a small peach slice or mint leaf for a refined finish.
